Since 2010, the “San Damiano” Cooperative has been breeding Alpine brown cows in a semi-wild state, respecting their life cycles and needs, as well as natural dynamics With their precious milk, which is used both raw and pasteurised, it produces yoghurt and ricotta cheese, soft and fresh cheeses as well as semi-cooked and aged cheeses.
Whey becomes an integral part of pig breeding, leading then to the production of various types of sausages and cold cuts. Rabbits, hens and ducks complete the wonderful farm.
Many wild species, from foxes to roe deers, from frogs to buzzards, can be encountered in the area of the lily ponds and in the woods close to the Cooperative, where they find peace, harmony and, above all, the respect we owe them.
